Late spring, summer and early fall are the most suitable months to photograph Cochem Castle to capture the greenery of the valley.
I recommend visiting in the morning to find the parking lot and castle less crowded. Although, you can find similar weather conditions any time during the day.
Field tips
Follow local drone regulations and permit requirements. In Germany, you're required to have insurance and an address on your drone if it weighs more than 250g (approx. 0.5 lbs).
Experiment with angles. There's a lot around the castle and you can incorporate the river, hills and cityscape from varying viewpoints.
If you brought another camera, you might be able to get some images from the Parkplatz. Take photos from the parking lot or walk up to the castle to get some close-up shots of the medieval architecture.

Check out the nearby Burg Eltz castle, which also offers stunning views of the greenery and architecture. It's another medieval castle that's still owned by a branch of the original Eltz family.
If you have time, you can go across the Moselle River and take photos from there.
Another great angle of the castle is from the Moselstern Hotel "Brixiade & Triton" Cochem. It's about a 10-minute drive from the Parkplatz near Cochem Castle.
