You can visit Lake Eibsee year round, but in the late spring and summer, you'll find the best lighting conditions and the water will be crystal clear for a reflection shot.
Be aware that in the winter and early spring the lake will be frozen over.
I prefer to visit in the early morning, during sunrise, when I have the entire scene to myself.
If you come with friends, I suggest going for a swim during the day and then waiting for sunset when you'll have another opportunity for more photos.
Field tips
I recommend using a wide-angle lens (20mm) to photograph the beautiful lake and a zoom lens to get closer to the mountain peaks.
Try shooting low to the water level. It will make the canoe and mountain scenery appear more grand, as well as help with reflections if the lake is calm.
Before you head out onto the water at sunrise, reserve a canoe overnight so you'll have it ready for you the next day. Position the canoe so it's in the center of your shot and create an intriguing focal point against the landscape.
Make sure to bring enough water and food if you plan on staying longer. The area is large and you can spend all day hiking, swimming and exploring.
Have a friend jump in the lake as it makes a very cool subject in your photo.

If you want to explore more, you can walk around the entire lake. You'll pass some great, less crowded areas, so make sure to stop and enjoy the breathtaking views along the path.
You can also go swimming in the lake in the summer, so make sure to bring a bathing suit!
