When to go
Any month of the year will have similar conditions near the Jockey Club Innovation Tower, but if you can visit on a public holiday or during the weekend, it'll be less likely to have people on the university's campus, which is where you'll launch your drone. This will apply to campus security, too.
I recommend visiting the campus around 9PM or later to avoid security or unwanted attention of your drone.
This shot would also look good during sunset.
Field tips
Before flying a drone, check and follow local drone regulations and permit requirements.
Be aware that if you fly your drone too far away from your original launch point, there could be a chance of signal interference due to the large number of buildings nearby.
If you want to capture the movement of the traffic going past the tower, you'll want to use a slow shutter speed. For reference, I used a speed of five seconds.
Incorporating the swimming pool into the image (like I did) will accentuate the facade of the building as it is a similar color to the water.

I recommend checking out the inside of the Jockey Club Innovation Tower. It's very modern and would make for some incredible architecture photography. You could take a model and use the building as a backdrop for some inspiring portraitures, too.
A short 13-minute walk south of this location is the large Hong Kong Museum of History.
You could also take a 17-minute walk northeast and visit Hung Hom Kwun Yam Temple. Built in 1873, it's a a traditional pavilion temple that holds four festivals each year.
